The unseasoned gamtae is very lightly and carefully roasted over an open fire, preserving the original flavor with stronger bitter green and oceanic notes than its seasoned cousin. It’s great sprinkled on salads, raw fish (think poke or tartare), or added into soups (especially bone broth).

 

What's gamtae?

Gamtae is an edible sea plant that only grows on the cleanest mudflats. They're rich in fiber and contains six times more calcium than milk in addition to an abundance of minerals that help with calcium absorption. Gamtae is also plentiful in potassium and iron, making it a great food for children, pregnant women, and the elderly.

 

About Sea Forest (Badasoop)

Founded by patriarch Cheolsoo Song, family-owned Badasoop has been providing gamtae using their patented skill sets since 1980. Gamtae has a long history in Korean cuisine dating back to at least the Chosun dynasty, when records show the royal family enjoying it as early as 1609. However, it is still rare and relatively unknown in Korea, as gamtae only grows in uncontaminated sea water and is impossible to farm; its peak season being the dead of winter makes it difficult to harvest by hand. These conditions mean that there are only a handful of folks with enough knowledge to provide quality gamtae.
